Why plastering work is hard to price well

Because you are usually a subcontractor.

Builders set the rate, and they are pricing you against whoever else they can get. That is stable work but it caps what you earn, and it means your reputation is with builders rather than with the people paying for the job.

Direct domestic work pays better. It is harder to win because homeowners cannot judge plastering, a wall looks flat under normal lighting whether or not it is.

What the customer is actually weighing

On builder work: whether you will turn up on the day. Plastering sits between other trades in a sequence, and a plasterer who slips a day pushes everything behind them.

On domestic work: price, mostly, because they have nothing else to compare.

Where the work comes from

Builders and contractors, dominantly. Two or three reliable relationships fill a diary.

Electricians and plumbers who need making good after first fix, a genuinely underworked source.

Property developers and landlords between tenancies, who need speed.

Direct domestic, usually via search or referral.

What separates you from the quote below yours

Reliability on dates. In a sequenced trade this is worth more than skill. A builder who can rely on you to arrive will keep you regardless of rate.

Invite the raking light test. Tell the customer to hold a lamp flat against the wall and look along it when you have finished. Offering the test that exposes bad work is the clearest possible statement that yours will pass.

Quote preparation explicitly. Skim over sound plaster and full re-plaster are different jobs. A customer comparing a skim price against a re-plaster price is not comparing anything.

Be honest about drying times. A customer who paints too early and gets flaking blames you.

Making the money conversation easy

Materials are cheap relative to labour, so no deposit is needed on ordinary work. Saying so wins domestic jobs outright against trades asking for money up front.
